Jamaica Fish Tea

To my Jamaican friends, thanks for the recipe, which is courtesy an old childhood, who is married to a Jamaican, and who enjoys cooking Jamaican food, making drinks and treats for him. It says Jamaica Fish Tea, but to me it is more a soup. Enjoy.

Jamaica Fish Tea
3lbs fish, cut into pieces
2 onions, chopped
6 cups water
2 tomatoes, chopped
1 hot pepper
1 tsp thyme
lime juice, squeeze
Place all ingredients in a pot with sugar.

Bring to a boil and simmer gently for about an hour.

Strain off liquid and serve with chopped parsley.
