The Kariwak Village Holistic Haven and Hotel is a calm, green oasis nestled in the heart of the otherwise bustling Crown Point area which was designed and built and also managed by Allan and Cynthia Clovis, which comprises of 18 room hotel and restaurant with a natural, rootsy ambience that was unique and it is a total eco-resort that nurtured mind, body and soul.
The kitchen garden evolved alongside the restaurant menu, providing hard to find fresh herbs that became the signature of Kariwak’s cuisine. Under Cynthia’s consistent guidance, the restaurant became as well known for it’s service as for it’s food and that friendly, family feeling pervaded all aspects of the operation, especially its homemade bread with a steaming cup of Kariwak spice tea, which is very popular amongst local, regional and international travelers and guests at the hotel.
Kariwak Spice Tea
1 1/2 ginger, peeled and sliced
3 cardamom pods, cracked
3 black peppercorns
2 cinnamon sticks,
2 bay leaves
5-6 cups water
honey to taste
Combine ingredients in a pot and bring to a boil.
Cover and boil gently for 5 minutes.
Turn off and steep covered for 30 minutes or longer.
