Everyone who is anyone enjoys guava jelly or jam, so why not make cookies too.
Guava Jam-Filled Cookies
8 tsp icing sugar
1 egg yolk
1/2 teaspoon vanilla
1/4 tsp salt
3 tablespoon guava jam/jelly
Granulated sugar as sprinkles
Cream butter and sugar and beat in yolk and vanilla.
Combine flour and salt and add to mixture. Mix well until the ingredients come together in a soft but firm dough. The dough should be easy to shape and hold.
Preheat oven to 350*F.
Using hands, form the dough into even-sized balls and placed on a greased baking sheet. Flatten slightly.
Using the end of a chopstick or wooden spoon, form a small indentation in the centre of each cookie. Fill the centre with guava jam/jelly and sprinkle the cookies with a little granulated sugar.
Bake in the preheated oven for 30 to 35 minutes. Remove and let cool on a wire rack before serving.
